Marvelous Moroccan Mushroom Lentil Soup





Ingredients:


- 1/2 cup Water, or less, enough to cover bottom of pot

- 1/3 cup Red Onion, roughly chopped

- 1 Tbsp Garlic, minced

- 8 oz Oyster Mushrooms, roughly chopped

- 1 can (16 oz) Green Lentils

- 1 1/2 cup Unsweetened Almond Milk

- 1 cup Sweet Potato, diced

- 3/4 cup Low-Sodium Vegetable Broth

- 1/2 cup Spinach, washed

- 1 Tbsp Chili Powder

- 1 Tbsp Ras El Hanout Middle Eastern Blend

- 1 Bay Leaf

- 1/4 tsp Salt

- 1/4 tsp Black Pepper
